rajma masala recipe, Punjabi style with step by step photos - this is a lightly spiced, creamy and a delicious Punjabi rajma masala curry recipe.
We are making it by soaking rajma or kidney beans for about 4 to 5 hours and then cook it in a tomato and onion gravy. This rajma recipe is very famous in north India.
We can make it for dinner, for lunch also and it takes especially with rice so the name chawal means rice always comes with rajma. We call it rajma chawal.

Ingredients:

Soaked rajma 1 cup or 100 gms,
Onions 2 medium in size finely chopped or grated,
Tomatoes 4 medium in size pureed it,
Garlic cloves 7 finely chopped,
Green chilies 2 finely chopped,
Coriander 1 small bunch finely chopped,
Salt 1 teaspoon or as per taste,
Turmeric powder ½ teaspoon,
Red chili powder 1 teaspoon,
Coriander powder 2 teaspoons,
Cumin seeds 1 teaspoon,
Garam masala powder 2 teaspoons,
Roasted cumin powder 2 teaspoons,
Bay leaf 1,
Green Cardamom  2,
Clove 4,
Black peppercorns 6,
Asafetida ¼ teaspoon,
Oil 2 tablespoons,
Ghee 1 tablespoon for garnishing.

Instructions:

       1.    Make the puree of tomatoes.

        2.    Put the soaked rajma in the pressure cooker and add 4 cups of water,2 black peppercorns, 2 green cardamoms in it. And put it on the flame.

       3.    Take out 4 to 5 whistles of it first one is on high flame and make the flame on medium for other remaining 4 whistles.

       4.    Then switch off the gas and let it cool down till all pressure from it get released.

       5.    Then check the rajma.

       6.    Now put a pot on the flame and pour 2 tablespoons of oil in it.

       7.    Let heat up the oil then put bay leaf, black peppercorn, and cloves in it.

       8.    Sorted it nicely.

       9.    Then put cumin seeds in it. When it crackled then put asafoetida in it.

     10. Then put garlic and sorted the garlic till becomes golden brown.

     11. Then add green chili, and add grated onion in it.

     12. Stir it well till becomes translucent.

     13. Then add turmeric powder, red chili powder, cumin powder, coriander powder and some salt in it.

     14. Stir it well to mix all the masala’s in it.

     15. Then add tomato puree in it mix it well and put the lead on the pot and cook it for 8 minutes on medium flame.

     16. Check it in between then after 8 minutes put cooked rajma in it then add garam masala powder and some salt in it. Stir it well then again put lead on it and cook it again for 5 minutes so that all the masala gets into the rajma.

     17. After 5 minutes check the rajma and then switch off the gas flame.
     18. Then put chopped coriander in it and mix it well.

     19. Now our rajma is ready. Take it in a serving bowl and garnish it with chopped coriander and ghee.

      20.   Serve it with rice it tastes so yummy.
