Medu vada recipe

Today we are making medu vada from leftover rice or moong dal khichadi. These medu vadas made very delicious and tasty.  If you made this medu vadas once you fall in love with these vadas. this medu vadas become as crispy as that of udad dal vadas.
Because in khichdi we already add lot’s of veggies and masala’s that’s why here we do not need to add veggies again in these vadas.

So let’s start the recipe,

Prep time: 20 minutes {including its rest time after mixing ingredients in it},
Cooking time: 20 minutes,
Total time: 40 minutes,
Servings: 16 vadas,
Author: pritee Kadam.

Ingredients:

leftover khichdi 2 cups,
Sooji 1 cup,
Yogurt ½ cup,
Salt as per taste,
Chopped onion 1,
Chopped green chilies 2,
Chopped curry leaves 6 to 8 leaves,
Chopped coriander 1 bunch.

Instructions:

     1. Take the leftover khichdi in a bowl.

     2.  Add sooji in the khichdi.

     3.  Add yogurt in khichdi.

     4.  Add chopped onions in the khichdi.

     5.   Add chopped green chilies in the khichdi.

     6.   Add chopped coriander in the khichdi.

     7.   Now to set the consistency of the batter to add some water into the mixture.
     8.   Now mix it well.

     9.   Leave it to rest for 15 minutes.

   10.  After 15 minutes take the batter and make medu vadas of it.
   11.   For making medu vadas first, we have to grease our hands with some water.
   12.  Then take some portion of batter and make a circular vada of it and make a hole in the center of it with your finger as shown in the figure.

13. Make same vadas of all remaining batter.

   14. Now we are shallow frying these vadas in the appam mould.
   15.  For this take appam mould.

   16.  Grease this appam mould with the oil.

   17.  Now put this mould on the flame.

   18.  And put all the made medu vadas in it one by one.

   19.  Put the gas flame on medium hit.

   20.  Now cover the mould with the lead and cook it for 8 minutes.

   21.   After 8 minutes open the lead and grease vadas with oil on the top.

   22.  Then flip the vadas one by one.

   23.   And cook it for 10 minutes in another side also.
   24.   When it cooked from both the sides take it out from the mould.

     25.   Put it in a plate.

   26.   Now your vadas are ready to serve it with sambar and coconut chutney.
